The cookie cake is the dessert that comes with nostalgic memories. Let your taste buds travel and treat yourself and your loved ones to a homemade healthy cookie cake. This guilt-free cake makes you want to eat it all by yourself, but share a piece with a companion too. It's just so good that it has to be shared!
Besides being easy to make, the cookie cake is also a sure bet. Nothing can go wrong. It can only get better, especially since it doesn't contain a gram of regular table sugar, but instead Nick meets in the cake`s products. Take a look at the recipe created by the nutrition coach and start making room in the fridge, because you want to eat this cake!
Ingredients:
- Nick`s caramel protein bar x1 (take two already, because you'll want to eat one while cooking)
- Vanilla-flavored stevia drops
- “Use like sugar” natural sweetener
- 500g of unflavored curd cheese paste
- 2 packs (340g) of sugar-free cookies
- 150g of preferred berries (frozen also suitable)
- For decoration, strawberries and blueberries
Preparation
- Start by making raw jam. For this, place the berries in a bowl. If you use frozen berries, pour hot water over them and let them thaw for about 15 minutes.
- When the berries have melted, pour the water into another bowl, it will be needed later. Add 2 tbsp Nick to the berries`s natural sweetener “Use like sugar” and puree into jam with a fork or hand blender.
- Then add 500g of curd cheese to the bowl and flavor it with about 10 drops of vanilla stevia. Stir and add a few more drops if needed.
- Dip the cookies one by one into the berry liquid and lay them on a tray or
on a cake tray as a 4×4 square cake. If you use fresh berries or ready-made raw jam for the jam, place 1 tbsp of jam and half a cup of water in a bowl for soaking the cookies and stir.
- Spread curd cheese on the first cookie layer, jam on the second, and the rest of the curd cheese on the third. Also cover the edges of the cake with curd cheese.
- Now chop Nick`s caramel protein bar.
- Decorate the cake with strawberries, blueberries, and bar pieces, optionally add some mint leaves, and let the cake sit in the fridge for a few hours before serving.
- Invite friends together and enjoy a healthier version of the classic cookie cake!
