Recipe: Cookie cake - Kärolin Vallimäe

Cookie cake is the dessert that comes with nostalgic memories. Take your taste buds on a journey and treat yourself and your loved ones to a homemade healthy cookie cake. This guilt-free cake makes you want to eat the whole thing alone, but share a piece with a companion too. It's just so good that it has to be shared! 

Besides being easy to make, the cookie cake is also a sure bet. Nothing can go wrong. It can only get better, especially since it doesn't contain a gram of regular table sugar, but instead NICK'S meets in the cake products. Take a look at the recipe created by the nutrition coach and start making room in the fridge, because you want to eat this cake!

Ingredients:

Preparation

  1. Start by making raw jam. For this, place the berries in a bowl. If you use frozen berries, pour hot water over them and let them thaw for about 15 minutes. 
  2. When the berries have melted, pour the water into another bowl, it will be needed later. Add 2 tbsp of NICK'S to the berries. sweetener “Use like sugar” and puree with a fork or hand blender into jam. 
  3. Then add 500g of curd cheese to the bowl and flavor it with about 10 drops of vanilla stevia. Mix and add a few more drops if needed.
  4. Dip the cookies one by one into the berry liquid and place them on a tray or

 on a cake tray as a 4×4 square cake. If you use fresh berries or ready-made raw jam for the jam, place 1 tbsp of jam and half a cup of water in a bowl for soaking the cookies and mix.

  1. Spread curd cheese on the first cookie layer, jam on the second, and the rest of the curd cheese on the third. Also cover the edges of the cake with curd cheese. 
  2. Now chop NICK'S caramel protein bar.
  3. Decorate the cake with strawberries, blueberries, and bar pieces, optionally add some mint leaves, and let the cake sit in the fridge for a few more hours before serving.
