Who among us would not want to believe in miracles as sincerely as children. Why not forget the hustle and bustle of Christmas for a moment and take some time out to make a wonderful pastry with the whole family, the decoration of which knows no bounds! Did someone say gingerbread? Even better, soft and delicious gingerbread banana bread, which only takes 15 minutes to prepare. Stock up on a cookie cutter, nuts, cookies, cranberries, chocolate, and as many pairs of hands as you can find and you're guaranteed a fun, quality time and well…..a little cleanup later!
Once again, the recipe is gluten-free, if you choose lactose-free cream cheese and butter, then also lactose-free. Ps, eat the cake warm and why not, with Nick's ice cream!
- 250g of flour
- 1 teaspoon of baking soda
- 2 teaspoons of cinnamon
- 1.5 tsp gingerbread flavoring
- 1 tsp vanilla sugar or Nick's vanilla flavored drops
- 1/4 tsp salt
- Mix the dry ingredients together.
- 4 ripe bananas OR, if desired, 3 bananas and 1 dl finely grated carrot
- 50g of butter
- 2 eggs
- 115g of kefir
- 1 bar of dark Nick's chocolate
- 25g of Nick's sugar substitute
- 95g of honey
Beat the butter, sugar and honey together. If you use vanilla drops, add that too. Add mashed bananas, kefir and egg. Blend the mixture and slowly add the dry ingredients. Finally, add the chopped dark chocolate and grease the cookie tin with coconut oil or butter. Decorate with chocolate and banana slices or leave it undecorated and prepare cream cheese cream to cover the cooled cookie.
1 pk Philadelphia light 30g Nick's sugar 2 tbsp lemon juice Mix room temperature cream cheese, sweetener and lemon juice to a smooth mass.
